The meat was smoked and air-dried to keep insects at bay and to allow the meat to be stored for meals in the coming months . Meat is cut into thin strips , hung on racks or sticks high over a fire , and smoked and dried . Today , a good dehydrator can shorten the process , ensure the meat is completely dried , and reduce the chances of insect infestation or spoilage .
