Adobo Recipe

Servings: 4 to 6 Servings

Ingredients:

1 pound pork shoulder or belly cut into 2-inch cubes

1 pound chicken thighs or drumsticks

or

2 pounds chicken or pork

1 tablespoon oil

1 onion peeled and sliced thinly

1 head garlic peeled and minced

1 cup vinegar

1/2 cup soy sauce

1 cup water

3 bay leaves

salt and pepper to taste

Hey everybody, I’m sharing with you guys one of my favorite Filipino recipes. I’ve been eating adobo since I was a kid. Coming home from school, expecting this dish on the table is one of my cherished moments in my childhood days. Now I go home and have to cook it myself. It sucks! Anyways this dish is very popular in the Philippines. There are different ways to cook adobo and different ingredients that you can use to cook this dish, but I’m sharing with you guys how my mom cooks adobo. Here it goes.

Instructions:

In a pot over medium heat, heat oil. Add onions and garlic and cook until limp. Add the meat that you chose and cook, stirring occasionally, until lightly browned. Add vinegar and bring to a boil, uncovered and without stirring, for about 3 to 5 minutes. Add soy sauce, water and bay leaves. Continue to boil for about 2 to 3 minutes. Lower heat, cover and continue to cook until meat is tender and sauce is reduced. Season with salt and pepper to taste. Serve hot.

Test Kitchen Tips:

To quickly peel fresh garlic, gently crush the clove with the flat side of a large knife blade to loosen the peel. If you don’t have a large knife, you can crush the garlic with a small can.

Canola oil is high in monounsaturated fat, a type that helps to decrease blood cholesterol levels, and low in saturated fat, which can increase blood cholesterol. Olive oil would also taste great in this recipe and has the same healthy-fat properties.
