Avocado and Pistachio Nice Cream
If you are anything like me, you most likely enjoy desserts, but like many people are trying to keep up with a healthier lifestyle. Nice cream is the craze right now because with this simple recipe you can indulge in your cravings guilty-free, without that sluggish, bloated feeling that can come after eating dairy ice cream. Since It is filled with refined sugar, dairy, and calories, and let’s face it, who can only eat just one serving? One small serving can often contain more than 250 calories, and that is only a small serving, the whole tub can contain an entire day worth of calories or more!!! This recipe is easy, healthy, and provides minimal ingredients that most everyone already has, You can dress it up however you like and you can even eat it for breakfast, (Ice cream for breakfast, That’s a yes from me!). Now let’s get on to the actual recipe!
Ingredients
2 frozen bananas
1/2 avocado
1/4 cup pistachios (divided*)
1 tablespoon shredded coconut
1/2 teaspoon pure vanilla extract
1/4 teaspoon almond extract
Steps
1) If your pistachios are still in their shells, take them out and measure ¼ cup. Take a small handful of pistachio. Crush it with something flat and set it aside to be used later. Put all the ingredients except the small handful of crushed pistachios in the blender.
2) Blend until it’s completely smooth and runny. (This will make it feel like soft serve ice cream) Spoon it in a bowl and add the pistachios on top.
Spiced Banana Walnut Ice Cream
Ingredients
1/2 cup walnut butter or 1 cup walnuts
1 tbsp coconut oil
1 big frozen banana, pre-cut into cubes
2 medjool dates, pitted
1/3 tsp vanilla seeds
1/3 tsp ground cinnamon
Pinch of freshly ground nutmeg
1 tbsp chia seeds
1 tbsp cacao nibs
Toppings: extra walnuts (crushed) and extra cacao nibs
Steps
1) Add walnuts to the blender and blitz for few seconds (this if you’re not using already made walnut butter).
2) Add coconut oil, dates, vanilla seeds, cinnamon, nutmeg and frozen banana to the walnuts and blend until you get a creamy smooth texture, resembling soft serve ice cream.
3) Scoop out the mixture into a bowl and mix in the chia seeds and cacao nibs using a spoon or spatula.
4) Sprinkle the crushed walnuts and remaining cacao nibs into your moulds and scoop the ice cream on top of them. Cover and place in the freezer overnight.
5) If you’re using an improvised pop mould, cover it with cling wrap and poke a stick through it.
