Cocktails
50ml premium dry gin
25ml freshly squeezed lemon or lime juice
Crème de mûre (blackberry liqueur) or Chambord
(raspberry liqueur)
Splash of gomme (2 sugar to 1 water)
Slice of lemon and blackberries to garnish
Shake first gin, lemon and sugar syrup with ice and
strain into a rock glass (or any short tumbler) filled with
crushed ice. Drizzle berry liqueur of your choice over the
drink and serve with lemon and blackberry garnish and a
short sipping straw.
Bourbon
Old Fashioned
Undoubtedly, Old Fashioned is a
timeless vintage classic. It’s both
the name of a 135-year-old cocktail of
Kentucky descent, and the cocktailmaking technique based on muddling
all the ingredients slowly with ice
cubes. In my recipe water, unlike the
most popular method of preparation
with the addition of extra soda water,
comes from the melting ice cubes,
which are stirred to significantly
prolong the process allowing all
bourbon flavours to develop.
50ml premium bourbon (Woodford Reserve)
Angostura bitters
Teaspoon of brown sugar
Orange twist and maraschino cocktail cherry
Place sugar in a rock glass and saturate with 1-2 dashes
of bitters. Add ice cubes and half of the bourbon and
muddle until sugar dissolves. Fill the glass with more
ice cubes and add the remaining bourbon. Garnish with
orange twist and a cocktail cherry.

Simple to make, Gin Bramble with
its perfect balance of sweet and sour
tones rapidly became a modern
classic. Created in mid-80s in
London’s Soho, it is considered as
one of the most significant cocktails
of the last 50 years. Originally it
featured the blackberry flavour
of Crème de mûre with many
variations including my personal
favourite made with Chambord
raspberry liqueur and replacing
lemon juice with fresh lime juice
which gives it a bit of bitterness.
The UK’s first
savoury cocktail bar
will open in London
in July, showcasing
a range of exclusive
savoury cocktails
from snack makers,
Jacob’s, and
world-renowned
mixologist,
Matt Whiley.
