Winter Fairy Tale walnut pie ( 8 – 10 servings )
Prep time : 30 minutes Cook time : 20-25 minutes
Ingredients : Dough
• 2 cups all-purpose flour
• Half a teaspoon of salt
• 1 even teaspoon baking powder
• 150 g cold butter , sliced
• Half a cup of sugar
• 1-2 tablespoons honey
• 1 egg yolk
• Half a teaspoon of rum extract
• A quarter cup of cold water ( plus extra if needed )
Filling
• 1 and a half cup of coarsely chopped walnuts
• 1 and a half cup of sugar
• A quarter cup of cold water
• Half a cup of low-fat cream
• 2 tablespoons of honey
• 3 tablespoons of dark rum
Icing
• 2-3 tablespoons of castor sugar
• 1 cup of sweetened whipping cream
• 3 tablespoons of sour cream
• 1 teaspoon of orange zest
• 1 teaspoon of lemon zest
• 3 tablespoons of orange juice
• 1 tablespoon of lemon juice
Instructions
1 . Preheat oven to 180 ° C .
2 . In a bowl mix flour , salt and baking powder . Add cold butter , cut diced and mix well ( in a processor , blender or rub through fingers ) until the mixture becomes crumbs .
3 . Add sugar , egg yolk , honey and rum essence and mix again .
4 . Knead dough roughly by adding a tablespoon of water .
5 . Cut a small ball of dough for decoration . Wrap both balls of dough with cling wrap and leave to rest in the refrigerator .
6 . Meanwhile , prepare the walnut filling . Caramelise sugar and water until golden brown , remove from heat and add the butter and walnuts . Mix well and get back to heat . Add cream , rum and honey and stir and let homogenise . Remove and leave to cool .
7 . Remove dough from refrigerator and roll it using a rolling pin or stretch with hands into a pre-greased pie form , covering the walls of the form . Punch the dough with a fork and refrigerate for 5-10 minutes .
8 . Meanwhile , roll a thin crust using the small dough ball ( about 0.5 cm thick ) and cut several stars , flowers or whatever figures you like for the icing .
9 . Bake pie crust and cookies for decoration 20-25 minutes or until golden .
10 . Remove crust and let cool well before removing from the pan .
11 . Sprinkle cookies with castor sugar .
12 . Once walnut filling has cooled , spread evenly over pie crust .
13 . Whip the sweetened whipping cream for about 3-4 minutes or until soft peaks form .
14 . Add gradually , on medium or low speed , sour cream , orange and lemon zest and orange and lemon juice .
15 . Decorate the pie with cookies and some whipped cream .
16 . Sprinkle the pie slightly with castor sugar to get snowing effect .
