ROOIBOS AND HONEY MALVA PUDDING WITH A CARAMEL FUTURE TWIST
Malva pudding is a South African favourite but this version infuses Rooibos tea for antioxidants and uses honey instead of refined sugar – keeping it delicious yet mindful of well-being .
INGREDIENT
• 1 cup flour
• 1 tsp baking soda
• 1 cup milk
• 2 tbsp strong Rooibos tea
• 1 tbsp vinegar
METHOD
• ½ cup honey
• 2 tbsp apricot jam
• 1 egg
• 2 tbsp melted butter
For the sauce :
• ½ cup cream
• ½ cup honey
• 2 tbsp butter
• ½ tsp vanilla
Preheat the oven to 180 ° C . Mix the flour and baking soda . In a separate bowl , mix the milk , Rooibos tea and vinegar . In another bowl , beat the egg , honey and apricot jam until light . Stir in the melted butter . Alternately add the dry ingredients and milk mixture to the egg mixture , stirring well . Pour into a greased baking dish and bake for 35 to 40 minutes . For the sauce , heat the cream , honey , butter and vanilla until melted . Pour over the warm pudding . Serve with whipped cream or custard .
