GASTRONOMIC
USES:
INGREDIENTS
225 grs of whole
spelt flour
225 grs of sugar
125 ml of light
cream
70 ml of s
sunflower oil
3 eggs
1 over baking soda
2 blood orange
(red orange) zest
and juice
75 grs of dried
cranberries
75 grs of chopped
nuts
(8 SERVINGS)
RECIPE: VACCINIUM VITIS-IDAEA:
SPELT WITH CRANBERRIES AND NUTS
CAKE
Cranberries are a very popular forest
fruit in Central, Northern and Eastern
Europe. They can be eaten directly in
nature, but, due to their slightly sour
taste, they are usually consumed
already prepared, in sweets, jellies,
jams, etc. The leaves serve to make an
infusion .
PROCESS:
1.-Beat the eggs with the sugar and the oranges zest until get a
foamy texture.
2.-Include the light cream, the juice and the oil and mix it.
3.-Sift the flour and the baking soda and put it in the mix.
4.-Stir until the dough will be homogenous. Incorporate the
nuts (lightly last flour that doesn’t go to the bottom of the
cake) and the cranberries.
5.-Put the preparation into a removable mold with greaseproof
paper. Bake it at 180ºC for 55 minutes. Then let it cool and
decorate.
MEDICINAL
USES:
The leaves are antiseptic,
astringent, diuretic, refrigerant.
They are used in the treatment of
gonorrhoea, arthritis, rheumatism,
diabetes and diarrhoea.
The mature fruits are eaten fresh or dried as a
remedy for diarrhoea and as a treatment for sore
throats, coughs and colds.
