Rye , a hardy grain , was long seen as a weed , but gathered respect because it was able to grow in areas too wet and cold for other grains . It is a traditional part of the cuisine of Russia and Northern Europe . It was also grown in Colonial America , transported to America by the English and Dutch settlers .
Rye is a good source of manganese , fiber , phosphorus , copper , pantothenic acid and magnesium . Even though

RYE AND TRITICALE wheat products abound on supermarket shelves , look for products made with rye for both its rich and robust taste and for its numerous health benefits . Since it is difficult to separate the germ and the bran from the endosperm of rye , rye flour usually retains a large quantity of nutrients .

Rye was not cultivated until 400BC unlike other cereal crops . First grown in Germany , it grew as weeds among wheat and barley fields . During Greek and Roman times , many countries relegated rye as food for the poor , contrary to wheat which was considered a luxury food . In Scandinavia and Eastern European countries , rye has always retained its position of prominence . Today the majority of rye comes from the Russian Federation , Poland , China , Canada and Denmark , where it is grown commercially .
Rye has a close cousin called Triticale and is a hybrid of wheat . In Germany , circa 1935 , Triticale had great hopes , but it was slow to achieve widespread acceptance . Triticale requires few pesticides , reduces soil erosion and is especially suited to organic farming . It has only been grown commercially for the last 35 years and is primarily grown in Europe . Triticale is often included in prepared mixed grain hot and cold cereals , muffin flours , pancake mixes and crackers , and will almost always appear in its whole grain form . It actually has a higher protein content than wheat . Triticale can be found in most health food stores .

TURKEY REUBEN CASSEROLE Ingredients : Rye bread cubed to fit a 9 x 13 baking dish 1 lb . bag of sauerkraut drained / rinsed 1 lb . leftover turkey cut into strips ¾ cup purchased Russian dressing 1 ½ cups Swiss or Gruyere cheese
Toast Rye Bread Spread with Cream Cheese on the toast
Top with Smoked Salmon ( or your favorite deli meat ) Add cucumber , tomato and red onion
A squeeze of lemon juice and chopped chives will top off this take on a New York style bagel breakfast !
Directions : Spread rye cubes on bottom of greased 9 x 13 baking dish Arrange sauerkraut over bread followed by the turkey Pour the dressing over the turkey Bake at 375 degrees covered for 20 minutes Uncover and sprinkle cheese and bake for approximately 10 minutes or until cheese is melted
Toast Rye Bread Spread with honey to taste
Top with banana slices ( or your favorite fruit ) Enjoy !
