Pineapple Cake
Pineapple without the acid - and sugar of course! Refreshing.
Cut pineapple into small cubes and then
boil until it’s soft and the acid is out.
Leave in a pot overnight.
Ingredients
Pour out liquid, and add sugar and butter. Whip eggs slightly (no foam), and
add to mixture. Slowly add flour, mixing
it in as you pour it. If desired, first strain
the flour for a finer texture.
1 cup butter
1 pineapple
1 cup sugar
4 eggs
Grease and flour or paper a pan, then pour the mixture out evenly
from the middle of the pan and spread it evenly. Bake at 175°C oven
for about 45 minutes or until lightly firm.
Enjoy served warm or cold.
