Whipped Creamy Frosting
1 1/2 cups vegetable shortening
1 stick salted butter
1 1/2 cups sugar
1 large egg white
2 teaspoons vanilla extract
1/2 cup milk, heated
Using a mixer, cream the shortening and butter in a bowl. Add the sugar and beat well. Add the egg white and vanilla; beat thoroughly. Add the hot milk, 1 tablespoon at a time, and beat until creamy.
Chocolate Covered Strawberries
Best to get candy melts and melt according to directions on pacakge. Dip strawberries in it and allow them to cool on wax paper to get set up.
To Assmeble
With a pastry bag filled with the frosting put a ring of frosting around the outside the cupcake. This will act like a damn for the filling.
Next spoon some the filling inside that ring of frosting, on top the cupcake.
Then pipe the frosting on top the strawberry filling.
Last, garnish with a chocolate covered strawberry.
