Kupmurri on the go

Ever gone to an event and graved the smoky flavours of a kupmurri, the native berries of Australia or some fresh salt bush damper? If you’re taste buds are screaming for wholesome, comforting, jam-packed nutrient dense Australian superfoods that “we” call bush tucker than Clinto’s Kupmurri is your answer.

Clinto’s Kupmurri launched their traditional earth-oven style of cooking and bush tucker to the public three weeks ago at the local markets of the Gold Coast, Queensland. They promote health and knowledge about the traditional foods that have sustained the Indigenous people of Australia for thousands of years.

“We aim to break down barriers for accessing traditional foods, foraging legislation and bring more awareness to the foods naturally grown here.”

Clinton Schultz is a proud Gamilaraay man from the Tamworth-Gunnedah region who resides in the Gold Coast where his business is based. Clinton has been working hard the past twelve months planning and preparing to get his traditional food truck on the road and ready for business. Prior to Clinto’s Kupmurri van being launched, Clinton consulted for Presto’s events, Preston Campbell Foundation, provided catering for corporate clients and set up the training Café at Dreamworld.

This fantastic business supports other Aboriginal and Torres strait Islander businesses, local organic and cruelty free producers and businesses with a strong commitment to environment sustainability. They aim to increase farming enterprise opportunities for traditional owners and food producers throughout Australia.

“We use a commercial kai hangi cooker with paperbark and river rocks to create the flavours of a smoky slow-cooked ground oven feast. Beef, chicken, pork and vegetables are prepared this way and served with native coleslaw featuring samphire and saltbush on a bed of damper. Other foods on our menu include BBW skewed kangaroo, emu, and crocodile. Where possible standard ingredients are swapped out for native ingredients such as lemon myrtle or lemon aspen instead of lemon, finger limes instead of limed, macadamia nuts instead of peanuts, saltbush and pepperberry in place of table salt and pepper,” Clinton explains.

Clinto’s Kupmurri provides catering services as well as direct sales from the truck at events. They hope to be available at the 2018 Commonwealth Games inviting an international audience to experience the traditional foods of Australia.
