In our region , we ’ re lucky to have some of the best and biggest sheefish . Alaska ’ s largest whitefish are found only in the Arctic and subarctic . The Iñupiaq name for sheefish is sii ( pronounced like “ see ” in English ).
In springtime , people fish for sii attaching their favorite hooks ( niksik ) to jiggers usually made from a curved piece of driftwood , bone or other local materials . Out

on the ice , people visit and watch out for each other .
The meat of the sheefish is white , mild and slightly sweet . The fish is fatty . It has a few large bones and is easy to cut . Fresh sheefish can be frozen whole , then sawed into chunks . The frozen fish ( quaq ) can be cut up with an ulu and eaten with seal oil or can be thawed and then cooked in any way .
Sheefish can be baked ( argiq ) with mayonnaise and onions ,

rubbed with spices and grilled on high heat in a cast iron skillet , boiled ( Igaapiaq ), fried with or without batter , dried ( paniqtaq ), half-dried or fermented . It can be made into patties or fishcakes .
