Simple Moose Soup
NANA Region Style
Ingredients :
• 2 pounds moose meat , deboned and cut into small pieces
• Oil , for browning meat
• 1 onion , diced into small pieces
• 8 cups moose broth * ( substitute beef broth if needed )
• 1 clove garlic , minced
• 5 potatoes , cut into small pieces
• 4 carrots , peeled and sliced
• 2 ribs celery , chopped
• Salt and black pepper , to taste
• Optional : noodles and / or rice
Tools :
• Knife
• Cutting board
• Large soup pot
Procedure :
• Place a soup pot on the stove over medium heat . Add enough oil to coat the bottom of the pot .
• Season the raw moose meat with salt and pepper . Once the oil is hot , add the meat to the pan .
• Brown the meat , stirring occasionally ( every 3 to 5 minutes ). Don ’ t cook the meat all the way through , you just want the outside to be browned .
• When the meat is browned , add the cut vegetables and the garlic . Allow the garlic and vegetables to cook , stirring occasionally , for about 5 minutes .
• Add the broth to the pot and bring to a boil . Once the soup is boiling , reduce the heat to a simmer .
• Allow the soup to simmer for a minimum of 4 hours .
* To make moose broth : use clean bones and simmer in water for a minimum of 2 hours .

The project was guided by our Elders who serve on the NANA Regional Elders Council and by the Iñupiaq Language Commission . They seek to retain and restore our language for future generations . They understand that the revitalization of our language is vital to the continuity of our Iñupiat culture and traditions .
