Ingredients 1 sii fillet , bones removed ½ teaspoon garlic powder ½ teaspoon paprika 1 teaspoon sea salt ¼ teaspoon black pepper 2 tablespoons olive oil ½ cup salted butter 1 medium lemon , cut in half

Process Cut the fillet into sections about 2 ” wide and pat completely dry with paper towel .

Season the fish on both sides with garlic powder , paprika , sea salt and black pepper .

Heat the olive oil in a large skillet over medium heat for about two minutes .

Add the fish to the pan in a single layer . Sear , without moving , for three minutes or until the edges of the fish are white . Flip and cook for two more minutes or until the fish is cooked through .

Remove the fish from the pan and cover with foil to keep warm .

Reduce the heat of the pan and add the butter . Once melted , continue heating for three minutes , stirring occasionally , until the butter is brown and smells nutty .

Squeeze all the juice from both halves of the lemon into the pan . Bring to a simmer , then reduce heat and cook for about three minutes , stirring often , until the volume is reduced by half . The lemon butter sauce will still be thin , which is normal .

Drizzle a little lemon butter sauce over each serving plate . Place the pan seared sii fillets over the sauce , then drizzle more sauce on top .

The project was guided by our Elders who serve on the NANA Regional Elders Council and by the Iñupiaq Language Commission . They seek to retain and restore our language for future generations . They understand that the revitalization of our language is vital to the continuity of our Iñupiat culture and traditions .
