CARROT AND CORIANDER SOUP

1 onion diced
2 tbsp olive oil
1 clove of garlic minced
350g carrots chopped and grated
1 ½ tsp ground coriander
3 tbsp greek yogurt
700mls vegetable stock
Sea Salt
Black Pepper
Fresh Coriander

In a pan, add your oil onions, carrots and garlic, cooking until soft for around 3-4 minutes.
Add in some sea salt, pepper and your ground coriander and cook for a further 2 minutes
Add in your stock, and bring to the boil until the vegetables are tender then add to a blender
and blitz.
To serve, stir through some fresh coriander and plate up then add a tablespoon of Greek
yogurt and stir again to make extra creamy.
