There is now an established routine to optimise production . Monday is Sausage and Joints – Tuesday Cutting up – Wednesday more sausage - Thursday & Friday - curing and cleaning .
Despite the level of production quality remains Stephens ’ s driving passion - producing many and varied varieties of sausage all tested prior to sale . All bacon is hand cured and rubbed with salt and sugar and weighs less than when they started - unlike supermarkets .
The butchery is now a very valuable arm of the business .
But success means overcoming challenges along the way . When arable prices are low then the pigs get cheap feed as they always buy more than they produce . Some five years ago Stephen had just climbed into the shower when an angle grinder shorted out and started a fire in one of the barns . By the time he had raced back down flames were 40 foot high . That resulted in an 80k insurance claim which replaced the Barn but made the others look shabby ! So another 250k went on refurbishing the others .
INVALUABLE INVESTMENTS
Big investments that proved invaluable have been Solar Panels , LED lighting and the sinking of their own borehole .
Now after all that you would think there wasn ’ t a spare minute in any day – but at the time of my visit , the family were preparing to host the 125th ploughing match of the Norton Ploughing Association . Fields have been prepared for 40-50 tractors and two pairs of horses – which does take quite a lot of organising . Stephen is the treasurer too , so they look after the funds and the food too . The family have also always been involved with the Sheffield Food Festival both supporting and supplying .
I asked Stephen about the future and as you might expect , there will be no standing still ! More award achievements are planned and they also aim to triple the size of the butchery and even look at exporting their sausages because they are the only pork farmers to carry the ‘ Made in Sheffield ’ label which can only be granted by an act of parliament . Ongoing refurbishment and development of the buildings will continue
