in September the geese all
looked in fine fettle. They
were out in the fields where
they go after they’ve reached
around three to four weeks
old in the nursery.
Stuart puts one common
misconception about geese
to rest.
“They are actually very
friendly, as you can see,” he
explained. “They don’t tend
to get aggressive until they
are big enough for breeding
but before they reach

that stage they’ve been
processed and gone from
here.
“We start processing
them around the beginning
of December. Everything
from arriving here at a
day old whether ducks or
geese; to being delivered
to restaurants, wholesalers
and butchers is all done
here by us. Quite a number
of our geese go to Scotland
and the north of England a
fortnight before Christmas.
We have a great team of
local people who come in
and pluck them.”
