them, but we ended up trailing here, there
and everywhere with them. Today we are
mainly Texels and don’t breed. We fatten
up to 800 during the winter and it is my
grandson Liam who runs that side. We buy
lambs that are about 30 kilos rather than
small ones and go for a quicker turnover
killing out at 45 kilos. We also graze around
30-40 cattle in summer, but I buy 15 mainly
Limousin X cattle every week at Selby. I’m
not a Belgian Blue fan and I know I’ll get
shot down by the native rare breeds guys,
but they are rare for one reason. They are
no good for the modern meat trade no
matter how much people say there’s no
taste like a Highland or Longhorn or Dexter.
Quality Limousin X 16-18-month-old heifers
hung for a good fortnight to 20 days are
good enough for anybody.’
‘It is towns and chimneys that generates
income. We have what I feel is the best view
in the country from our farm shop café
looking out over Halifax and into Lanca-
shire, but the other way it is chimney pots
where there are a lot of people in their 50s
and 60s in terraced houses with their mort-
gages paid, a nice job and have money to
spend on food. They are my market. They
come here to buy quality meat.’
What has surprised David is the café and
in particular the amount of trade it does on
a Sunday.
‘I start at 5.30am seven days a week,
but I was against opening on Sundays. I
watched everybody around me opening
Sundays and starting cafés, so we did too
when the café opened in 2005 which is
now run by my granddaughter Lauren. I
still cannot get my head around how many
people will come and queue for breakfast
on a Sunday but obviously I’m pleased
they do.’
David is particularly impressed with Sel-
by Livestock Auction Mart and auctioneer
Richard Haigh.
‘When I needed a straight job buying
from a good auction mart, I had Selby
recommended by fellow farmer and buyer
Tim Garside. I phoned Richard one evening
telling him what I wanted, and he was here
in this yard next morning at 7am. I’ve been
at Selby every Wednesday ever since.
Richard is a very good auctioneer as he’s
good for the vendor and for the man who
is buying. We buy almost all our cattle and
pigs from Selby with occasional visits to
Northallerton and Thirsk and I pay on the
nail every week.’
David’s wife Kathleen worked alongside
David for many years but has now retired.
Their two sons Mark and Paul work in the
shop and in Pennine Feeds respectively
where Paul works alongside his son Liam.
Their daughter Joanne works in the busi-
ness and granddaughter Stacey runs the
pub that was bought nine years ago.
The Broster team now runs to just over
60 across all their businesses.
