I can remember. It’ s our main farming enterprise. Dad kept two sows when he was working for others and we have 300 sows finishing their progeny and sending to Jewitts’ abattoir in Spennymoor. The sows are half-Duroc and half-Landrace with boars being half-Pietrain and half Large White. It’ s a complicated mix but the Duroc provide more inter-muscular fat than any other breed, which is good for pork eating quality

and the Landrace has good mothering traits. We wean 400 every three weeks. Through the shop and markets we use about 10 per cent of what we produce with the rest going to other butchers. We cure our own bacon, make our own sausages and salami.’

As much as Dean enjoys his pork, bacon and sausage side of the business it is usually his beef that everyone wants to talk about.
