The pigs are Landrace X
Duroc X Pietrain. We’ve been
using the Pietrain boar for
about 10 years as it keeps the
backfat down and produces
a very meaty pig. PIC have
proved extremely helpful in
maintaining the quality of pig
we produce. The sow line we
use has the intra muscular fat
that gives our pigs the taste,”
she added.
Anna’s on-farm butchery,
employs four butchers who
also make the deliveries,
process an average of 220
pigs a week with 150 going
out as full carcase and the
other 70 processed into bacon,
sausages and various cuts.
Her customers stretch as far as
Newcastle upon Tyne and as far
south as London.
“Pigs are all about getting the
carcase balance right, getting
the best out of every cut,”
she said. “We have a massive
bacon trade and it can fly out
all day long, but with so much
cheap imported meat about we
all need to increase the value
and awareness of cuts like
shoulder pork. Pig prices are
