4 . Prep a baking sheet with a roasting rack , but if you don ’ t have one , just put some foil or parchment paper on your baking sheet to prevent sticking .
5 . Place sliced eggplant on the pan or roasting rack and drizzle with your choice of oil and then salt and pepper .
6 . When the oven is preheated , put the eggplant in for 30 minutes and roast .
7 . Time for the concasse . On the stovetop , put a medium sauce pan on medium-high and add one tablespoon of butter . When the pan is hot and the butter has melted , turn the temperature down to medium , add the chopped onion and let it sweat .
8 . When the onion is somewhat translucent , add the minced garlic and stir to cook for about 30 seconds . 9 . Place the cherry tomatoes in the saucepan and let them stew . 10 . After cherry tomatoes are warm and somewhat cooked , take a whisk and smash them so they open up and release all of their juices into the pan . Stir and turn the heat down to low , and cover . Let it simmer for 20 minutes , and then stir in chopped basil .
11 . Prepare polenta . The polenta only takes about 5 minutes so if your timer is almost done on the eggplant , get it going . Follow the manufacturer ’ s instructions ,
12 . Or bring 1 cup of water or chicken stock to a boil , add 2 tablespoons of cannabutter and then add ½ cup of polenta .
13 . Turn the heat down to a simmer and let the polenta firm up while stirring . It will need to continue simmering for about 2 minutes before you take it off the heat . 14 . Once the polenta is finished , sprinkle it with salt and pepper . 15 . Plate it up ! I do polenta on the bottom , then tomato concasse and eggplant , and top with room-temperature turkey leftovers . Sprinkle some of your basil on the top , and you will have a beautiful , healthy dinner !
