Warm Up With a

PB & J Panini by Chef Dana Howard

When it ’ s cold outside , and there ’ s snow on the ground , we all look for some comfort food to warm our bellies . I have a special treat for you this month . Something a little out of the ordinary , but if you stay with me and try it , you are probably going to love it !

Lots of us have had a panini before . What is a panini anyway ? Well , it is basically a grilled sandwich , but it is pressed to get the inside warm and gooey while toasting the outside pieces of bread . Usually , your panini will look a little smashed , and that ’ s okay ! I love these types of sandwiches so much , but it is hard to find a true panini at a restaurant these days . So , let ’ s make our own !
You can use any bread you want for this sandwich . I suggest a nice loaf of white bread , country white . Maybe you make your own or buy a fresh loaf from your baker . Remember , the bread does count because it ’ s all about the sandwich . Traditional paninis are filled with all sorts of ingredients . You can do an assortment of cheeses and herbs , freshly sliced Italian meats like prosciutto and mozzarella . I love to sauce mine up with basil or sundried tomato pesto , or even a little Alfredo sauce .
The best part about this sandwich is that you can put whatever you want in it . The grilling can be done a few different ways . If you are fortunate enough to have a panini grill , please use that , but you can absolutely improvise if you don ’ t . We use our gas grill at home , and it works perfectly . If you don ’ t have a grill available , simply use your stovetop and a skillet . It will do the trick .
So , what am I going to put in my panini , you ask ? I ’ m going to make my favorite before bedtime cannabis snack with you . It ’ s a PB & J panini . Of course , we are going to infuse it ! I know when I first heard of a grilled PB & J sandwich , I was very skeptical . I did , however , become intrigued , so I watched how it was made , and I tried it . It was like a grilled , buttery , crusty outside with a warm , gooey , sweet , and salty inside . Wow , my tastebuds were delighted . The fun part is you probably already have all the ingredients in your pantry !
How to infuse this panini really depends on what you ’ re working with . If you have cannabutter , just simply spread it on the outside of the bread before grilling . If you have infused oil , I will show you how to use that quickly . I have this amazing peanut butter powder called PB2 . It is peanut butter powder that you can add to anything — smoothies , baked items , or simply add some infused oil , stir it up , and there you have creamy peanut butter ! I like to make mine this way , so I will write it into the recipe to demonstrate .
Ingredients
• One loaf of your favorite bread sliced
• 3-4 tablespoons of infused or regular butter
• 6 tablespoons of PB2
• 3 tablespoons of infused oil
• 2 tablespoons of your favorite jelly
• Sugar and cinnamon to dust bread
The Method
1 . Take 6 tablespoons of PB2 and place in a small mixing bowl . 2 . Stir in the infused oil until it becomes the consistency of peanut butter . 3 . On each slice of bread , spread a good amount of butter on one side . 4 . Sprinkle the buttered side of the bread with sugar and cinnamon as desired . 5 . On the other side of each piece of bread , spread on peanut butter
( not too much , or it will all squish out when you smash it ). 6 . Top the peanut butter with a little bit of jelly , just to cover . 7 . Place another piece of buttered and sugared bread on top with the cinnamon sugar side out . 8 . Warm your grill to medium-low . 9 . Place each sandwich on the grill and press firmly with a spatula . 10 . When the bottom side is nicely toasted , flip and repeat . 11 . Take the panini off the grill when the second side is nicely toasted , 12 . Cut it in half and enjoy while it is still warm !
