Chicken Salad

When it is hot outside , the last thing I want is a heavy meal . I prefer lighter options during August because I am usually out in the field working in the hot sun . I love cooking chicken when it is hot outside because it is low in fat and doesn ’ t weigh me down . For this recipe , we will make one of my all-time favorite salads . It ’ s an oriental chicken salad . We won ’ t name drop for the article , but this is something that I used to get all the time at a favorite restaurant . And better yet , we are going to infuse it !

I always infuse the salad dressing when I make a salad because it is just the easiest way to incorporate it into the dish . I will use infused MCT oil for this recipe because it doesn ’ t have any flavor . So , when blending your salad dressing , just add a touch of your MCT oil at the very end so it can get mixed in nicely . I also like to make sure mine is nice and light , but you can add as much infused oil as you want — depending on the infused dose you desire .
When I choose my salad ingredients , such as the cabbage and romaine , which we ’ ll use here , I always use the freshest possible . Often , I use what I have growing in my garden , and if I don ’ t have any currently growing , I will get what I need from the local farmer ’ s market . The farmers I know at the market can be trusted because I ’ ve asked them to explain their growing process . This is much like the relationship that you should have with your caregiver if you have one . The more open they are about their growing process , the more you can decide if they have something you want to put in your body . So , with that said , I bought cabbage from a farmer at the market that I know , and I used romaine that I had growing in my indoor space . This salad will be super delicious and super healthy . Lastly , remember always to wash your produce thoroughly before you cut it . This helps to keep your meals clear of any contaminants that may have been on your produce .

Dressing Ingredients 3 tablespoons of honey 1 ½ tablespoons of rice wine vinegar ½ teaspoon of infused MCT oil ¼ cup of mayonnaise 1 teaspoon of Dijon mustard 1 / 8 teaspoon of sesame oil
Grilled Chicken Ingredients 1 lbs of chicken Salt Pepper Garlic
Salad 4 cups of romaine ½ cup of red cabbage ½ cup of napa cabbage 1 carrot shredded 3 tablespoons of sliced almonds
The Method 1 . Blend together all dressing ingredients , adding the oils at the end . Refrigerate until ready to serve . 2 . In a large saucepan , preheat oil over medium-high heat . 3 . While that is warming up , cut your chicken breast into several long thin strips . Set aside . 4 . Place some water in a small bowl . In a separate bowl , combine the flour , panko , salt , and pepper . 5 . Dip the chicken strips in the water and then into the flour , coating completely . 6 . When the oil is hot , carefully add chicken strips and fry for 3-4 minutes or until cooked through or golden brown . 7 . Set your cooked chicken on a paper towel to cool . Once cool , cut into bite-size pieces .
8 . To prepare your salad , combine the romaine , red cabbage , napa cabbage , and carrots . Add in your chopped chicken pieces and sprinkle with almonds to taste .
Last , we ’ ll top it off with our delicious oriental honey dressing and enjoy !
