Prawn Paella the Slimming World Way!
Ingredients
Low calorie cooking spray
2 onions finely chopped
4 gloves garlic finely chopped
1 red pepper halved, deseeded and
roughly chopped
1 yellow pepper halved, deseeded and
roughly chopped
350g dried paella or risotto rice
small handful finely chopped parsley
1 bay leaf
a large pinch saffron
1.2 litres boiling chicken stock
100g frozen peas
500g peeled raw prawns
Method
Spray a large non- stick frying pan with
low calorie cooking spray and place over
a medium heat. Cook onions for 2 – 3
minutes. Add garlic and peppers and
cook for a further 2 – 3 minutes.
Add rice, parsley, bay leaf, saffron
threads, stock and peas to the pan. Bring
to a simmer and cook over a low heat,
uncovered for 15 minutes.
Add the prawns and cover tightly. Cook
for a further 10 minutes or until the rice
is tender, the prawns are cooked and the
liquid has been absorbed. Remove from
the heat and let stand for a few minutes
before serving.
Top tip if you don’t have saffron then use
a pinch of turmeric and paprika.
