COSHOCTON - The fair is over for this year . Days are getting shorter and nights chillier . It ’ s a time for hot soup and hot drinks , and spices like ginger and cinnamon . Desserts include pumpkins and apples , and more local lettuces and salad greens are available .
The summer season may be over , but Coshocton Farmers Market on Main Street is still open through October , selling fresh produce such as crisp local apples , pumpkins and winter squash in a range of colors , beets , onions , potatoes , and sweet potatoes . Salad greens , Swiss chard , and kale are more plentiful , and sweet peppers are available in a variety of sizes and colors .
In addition to fresh produce , market stands sell homemade treats such as pumpkin spice fudge , apple pies , tea breads and cookies of all sorts . Other market specialties include local honey and maple syrup , homemade jams and spreads .
It ’ s not too early to think about holiday gift-giving . Market finds include lip balms , essential oil butters and scrubs , wreaths and other décor , baby bibs , tote bags , hanging kitchen towels , gourd art , pottery , and crocheted potholders , scarves , and hats .
Don ’ t forget ! The market is open on Main Street from 8:30 a . m . to noon each Saturday through Oct . 28 .
On chilly fall days , nothing beats the sweet , satisfying taste of butternut squash . Here ’ s a recipe from vegetariantimes . com that includes extra fall flavor from apple cider . ( You can also try the recipe using sweet potatoes instead of squash .)
Roasted Butternut Bisque 1 medium-sized butternut squash , halved lengthwise and seeded 1 tbsp . vegetable oil 1 cup thinly sliced onion 2 tsp . light brown sugar 2 tsp . minced ginger 1 clove garlic , minced 3 cups vegetable or chicken stock ½ cup apple cider Salt and black pepper to taste
Put squash , cut side down , on baking sheet . Bake about 50 minutes , or until tender . When cool , use paring knife to remove peel . Cut squash into 2-inch pieces . Heat oil in large pot over medium heat . Add onion , brown sugar , ginger and garlic . Cover and cook , stirring often , until onion is tender , 15 minutes . Add squash , stock and cider . Simmer mixture ; reduce heat to medium-low . Cook 10 minutes . Purée until smooth . For a creamier soup , add some cream or half-and-half . Season , bring to a simmer , then ladle into bowls .
