Italian favorites are always a welcomed choice
When I think of comfort food , my first thought goes to pasta — glorious , comforting , steamy noodles that are sometimes made larger and filled with melty cheese . Combine this with a homemade marinara sauce and all is right with the world . When we go out to eat with friends , they are always willing to go for Italian . I ’ m the first to lead the way .
When Neal and I take our grown kids out , we often choose Italian . At one of our favorite restaurants , they bring us hot bread along with olive oil and Parmesan cheese to dip it in . Our 6-year-old granddaughters dip their fingers into the oil and then into the cheese . They absolutely love Parmesan . I ’ ve never seen two little girls who adore it more .
Forget the bread ; they love the cheese .

round table . They each had a pile of cheese on a small plate while both happily ate it up . I looked around the table and thought of how blessed I am to have such a wonderful family . Our son Jamie is one of the editors of my brother Jim Scudder ’ s television program , “ In Grace .” This program showcases adventures in places around the world like Israel , Alaska , the Middle East and the Grand Canyon , talking about how archaeology and geology prove the Bible is true . The program is aired on YouTube , Roku and TBN .
Amanda works as an after-school teacher and a teacher of a 2-year-old preschool class at our home church in Illinois , the Quentin Road Baptist Church .

She sings often in groups for the church or for special programs . She plays the piano and the guitar . I love it that our children love the Lord . I love to think about them serving him with all their hearts . This is really all we can ask for as parents . We can ’ t guarantee their lives will be blissful and easy . The truth is , in this world , there are a lot of difficult times . Our kids and grandkids will have to face tough stuff . But the Lord is there to lead the way and bless them .
Mama , if you are discouraged right now as you raise your children , don ’ t despair . God is at work . The prayers you are praying for them will not go unheard . Grandma and Grandpa , your love and care for your grandchildren make a powerful difference in their lives . Continue . It is worth every hard time to see them grow and go forward .

MAGGIANO ’ S RIGATONI D
This is one of my all-time favorite recipes from Maggiano ’ s , a delicious Italian restaurant . The flavors absolutely meld together — so good and so comforting . This is a must-order when we go for Italian . Consider trying this at home or bring it to a potluck . 2 tablespoons extra virgin olive oil 10 ounces button mushrooms 3 tablespoons balsamic vinegar 1 yellow onion , chopped 2 teaspoons garlic , pureed Salt and pepper 1 pound chicken breast , cut into 1 to 1 1 / 2 inch pieces 1 / 2 quart , plus 4 tablespoons chicken stock 1 tablespoon vinegar 1 / 2 quart heavy cream 1 pound rigatoni pasta 1 tablespoon fresh basil , chopped ( and parsley mix ) 2 tablespoons Parmesan cheese , grated 2 ounces garlic butter Parmesan cheese , shavings ( garnish ) Chopped fresh parsley ( garnish )

Heat oil . Caramelize onions . Sauté mushrooms with balsamic vinegar . Add onions to the mushrooms . Season with salt and pepper . Add garlic . Add chicken . Add chicken stock and vinegar . Cook until reduced by half . Add cream and bring to a boil . Turn down heat and simmer to skim away any impurities . Cook rigatoni al dente . Add drained rigatoni to chicken mixture in pan . Finish with basil-parsley mix , Parmesan cheese , garlic butter , and salt and pepper . Add more Marsala for flavor as needed . Place in pasta bowl . MAGGIANO ’ S SALAD WITH HOUSE DRESSING
We always order a family style of this salad as soon as we sit down at Maggiano ’ s . The salad dressing perfectly complements the crisp prosciutto , lettuce , bleu cheese ( the restaurant uses a pretty mild bleu cheese ), thinly sliced red onions and Parmesan cheese . So good ! Dressing 1 / 3 cup red wine vinegar 1 tablespoon Dijon mustard 1 tablespoon white sugar 1 / 2 cup water 2 teaspoons minced garlic 2 1 / 2 teaspoons kosher or coarse-grained salt Freshly ground pepper to taste
1 cup olive or vegetable oil ( depending on your preference ) 1 generous pinch dried oregano Salad 5 cups chopped Romaine lettuce 5 cups chopped iceberg lettuce 3 ounces Gorgonzola cheese 4 ounces thinly sliced prosciutto 1 small red onion , thinly sliced About 1 / 2 cup vegetable oil ( for cooking the prosciutto ) To prepare the dressing , combine all the ingredients except for the oil and oregano in the jar of a blender . Blend until smooth . Then with the blender running , add the oil in a steady stream . Turn off the blender , add the oregano and pulse 2-3 times or until combined . Set aside . Heat the vegetable oil in a large skillet over mediumhigh heat . When hot , add the prosciutto and cook until brown and crispy . Remove with a slotted spoon and drain on a paper towel . Set aside . In a large bowl , toss the lettuce , cheese , onions and crispy prosciutto . Lightly drizzle some of the dressing on the salad and toss until combined .
