Coshocton Farmers Market is in full swing

The Coshocton Farmers Market has been going full swing rain or shine since opening the first Saturday in May.
It is now approaching the end of strawberry season and heading toward black raspberry season, so jam and pie making will ramp up. Produce vendors have had spring onions, radishes, kale, lettuce and beets. More produce is expected with the warm weather. Honey vendors are getting ready to extract honey off their hives in the next couple of weeks.
Bakers have been busy baking fresh bread including sourdough bread, cinnamon rolls, cookies, pies, sweet breads and brownies with one vendor offering glutenfree baked goods. Artisan crafters have a variety of jewelry options available, leather goods, suncatchers, crocheted items and home decor. The market also has vendors offering canned salsas, chicken, beef, eggs including duck and quail eggs, fresh roasted and ground coffee, local maple syrup, and soaps and lotions.

On Saturday, June 7, Marty Trese will be at the farmers market to help seniors with the SFMNP. She is the advocate for Coshocton County and will be there to answer questions and provide information. WIC coupons will be available in the next week or two.

3 tablespoons maple syrup 10 ounces mixed baby salad greens ½ cup frozen orange juice concentrate ¼ cup balsamic vinegar ½ cup extra-virgin olive oil 2 ounces goat cheese
Place beets into a saucepan and fill with water to cover. Bring to a boil and boil for 20-30 minutes until tender. Drain and cool, then cut into cubes.

While the beets are cooking, place the walnuts in a skillet over medium-low heat. Heat until warm and starting to toast, then stir in the maple syrup. Cook and stir until evenly coated, then remove from the heat and set aside to cool.
In a small bowl, whisk together the orange juice concentrate, balsamic vinegar and olive oil to make the dressing.
Place a large helping of baby greens onto each of 4 salad plates, divide candied walnuts equally and sprinkle over the greens. Place equal amounts of beets over the greens and top with dabs of goat cheese. Drizzle each plate with some of the dressing.
The Coshocton Farmers Market is located at 22375 County Road 1A in Coshocton and is open every Saturday from 8:30 a. m. to noon until the last Saturday in October.
