Herbal Potato Salad
2-3 lbs. of newly-dug potatoes (cooked and diced)
*leave the tender skin on; that’s where all the vitamins are*
1 medium onion -chopped
4-6 hard boiled brown eggs -chopped
4 ribs of celery - chopped
6-8 slices of bacon - fried crisp - drained well - crumbled
1 good bunch of fresh dill or fennel - chopped fine
Combine all of the above in large bowl.
Dressing:
2 cups mayo
3 tbsp. red wine vinegar
splash of milk
3-4 tsp. sugar (sweeten to taste)
1 tbsp. whole grain mustard
Salt & Pepper to taste
Toss dressing over potato mixture. Chill, serve and enjoy.
