Try these recipes when grilling with family and friends

My dad loved boating . We started out canoeing on Leech Lake in Northern Minnesota . He soon bought a motorboat and then a bigger one .
I would always sit cross-legged on the bow , loving the wind in my face . During my late teen years , he bought a sailboat that we kept at the Great Lakes Naval Base in Waukegan . We would go out for a day of sailing on Lake Michigan well before the weather really called for it . We were just so anxious to be out on the water .
By July it was finally warm enough to really enjoy being out on the windy lake . If we didn ’ t bring sandwiches along , we would go back to shore , where Dad would get out a small , portable grill . His famous barbecue chicken was on the menu , but the only sad thing was I knew we were still at least an hour away from eating because chicken takes so long . Still , I knew the finished product would be worth it .
He would slowly grill the chicken . The amazing smells of meat made my mouth water . My stomach growled as he finished the chicken by brushing it with barbecue sauce . The sauce would caramelize before he took off the chicken from the grill . Mom would gather the rest of the sides : green beans , macaroni salad and coleslaw . I would set the table with paper plates . My brother would get everyone water or a pop . One of us would pray . Finally , it was time to eat .
Taking that first bite with the crispy skin , the tender meat and the sweet tang of the barbecue sauce made every minute worth the wait .
I have since learned the trick to good barbecued chicken is patience . It takes longer than hamburgers or hot dogs . If you cook it at too high of a temperature , it will char , and the inside will be raw . But if you get it right and cook it slowly , that first bite will tell you everything you need to know about life .
Macaroni salad goes well with fried chicken . It probably isn ’ t a real cookout if one or both isn ’ t on the menu . I feel like our area of the country has some amazing cooks who understand flavor . A close friend makes macaroni salad with her own dressing and adds chopped hardboiled eggs . She said the recipe came from here cousin , Lori . The creamy dressing is addicting .
My friend Tina has a coleslaw recipe that is famous at our Wild Game Dinner . The celery seed gives it a great taste .
For dessert , think about serving frozen banana pops . Half of a banana is skewered onto a Popsicle stick and dipped in melted candy melts , drizzled with a different color and then sprinkles . These recipes
are sure to make your cookout a great way to celebrate summer .
DAD ’ S BARBECUE CHICKEN
A whole chicken cut into pieces or chicken legs and thighs Olive oil Salt and pepper Open Pit or Sweet Baby Ray ’ s Barbecue Sauce Rub olive oil onto the skin of the chicken , then sprinkle with salt and pepper . Try to do this the day before you barbecue it . If you can ’ t do it the day before , do it at least 2 or 3 hours before grilling it . Moderate your heat on the grill by moving coals to one side . Lay the chicken on the hottest side of the grill . Grill uncovered for 5-10 minutes ( be careful the chicken doesn ’ t burn ).
Once you have a good sear on one side , turn the chicken and put it on the cooler side of the grill if using charcoal or turn the heat down to low if you have a gas grill . Keep the grill at 250 F . Cover and cook for 20-30
minutes . Turn the pieces over and baste with barbecue sauce . Continue grilling for another 20-30 minutes . Take the breasts off when they reach the internal temp of 160 F . Keep the thighs and legs on until they are 170-175 F . Serve more barbecue sauce on the side .
LORI ’ S MAC SALAD
Dressing
32-ounce Miracle Whip 1 / 4 cup sugar 2 tablespoons mustard
Mix together , then fold in rest of ingredients . 8 hard-boiled eggs , cubed 2 stalks celery , chopped fine 1 onion , chopped fine 5 cups cooked macaroni
Serve in a glass bowl , not a plastic one . Lori and my friend both say it makes a difference in the taste .
TINA ’ S COLESLAW
2 bags shredded coleslaw mix 1 shredded carrot
Dressing
1 cup Miracle Whip 1 tablespoon sugar
2 tablespoons apple cider vinegar 1 teaspoon celery seed 1 tablespoon milk
Mix dressing ingredients . Toss with coleslaw mix and shredded carrots . This is best made the day before and refrigerated until serving .
PATRIOTIC BANANA POPS
Bananas Popsicle sticks Red , white and blue candy melts Patriotic sprinkles
Cut bananas in half . Put onto a Popsicle stick . Melt candy melts in microwave . Drizzle with more candy melts and decorate with sprinkles . Freeze until ready to serve .
