Copa Mom Strong: Staying Healthy Recipes with Denise Flores Okay, so one of the most asked questions I get asked, ‘Is how many times do I work out a week?’ In reality the term ‘you are what you eat’ is really what it comes down to—and eating throughout the day will help curb the desire for the big meals. I stick to healthy options that are homemade with as little processed food as possible. I’m not perfect, but I strive everyday to make the best choices for my family and myself—a busy mama, working a full-time desk job in the mortgage industry, who tries not to make any excuses. No-Bake Energy Bites Prep Time: 10 minutes Total Time: 10 minutes Yield: About 3 dozen Ingredients: 1 cup (dry) oatmeal (I used old-fashioned oats) 2/3 cup toasted coconut flakes 1/2 cup peanut butter 1/2 cup ground flaxseed or wheat germ 1/2 cup chocolate chips or cacao nibs (optional) 1/3 cup honey or maple syrup 1 Tbsp. chia seeds (optional) 1 tsp. vanilla extract Method Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like. (Mine were about 1” in diameter.)
