Copa Mom Strong: Add a little sweetnesss in your life! by Denise Flores Fruit can be fun, colorful and delicious. I have seen a handful of cheesecake ideas on social media and decided to try my own version. After 3 tries I finally figured out a scrumptious, light, mouthwatering treat. My taste testers at home couldn’t keep their hands off! Give it a try but always remember to portion control :) Prep Time: 15 min Method time:10-15 min Total Time: 30 min Ingredients: 2 16 oz of strawberries (large if able) 1 8 oz box of Greek Yogurt cream cheese (let stand on counter to soften up for 15-20 min prior to starting) 1/8-1/4 cup of stevia 1 tbsp of raw honey (I bought mine from the cleaning lady at work, best honey purchase I ever made!) 1tbsp of cinnamon 1tbsp of unsweetened almond milk Pecan pieces (optional) Gram Crackers to crush for your topping Method: Pull small green stems off and pit the strawberries to leave a small scoop to fill. Rinse and pat dry with paper towel. Place in fridge till ready for use. In a separate bowl mix cream cheese, stevia, honey, cinnamon, almond milk and pecan pieces (optional). Place in fridge till ready for use. In separate bowl crush graham crackers to a fine sand like texture and set aside. Take strawberries and cheesecake mix from fridge, fill each strawberry with 1 tsp of cheesecake mix, then roll the top of your strawberry in graham cracker crumbs.
