In fact, coconut oil is the richest source of these medium-chain fatty acids.
This is compared to most other oils, which are made up of long-chain
triglycerides (LCTs) and have more than 12 carbons. Soybean oil is 100
percent LCTs and coconut oil has 40 percent LCTs and 60 percent MCTs.
This makes a huge difference because of the way our bodies metabolize
MCTs and LCTs.
LCTs are very difficult for the body to break down and require a special
enzyme for digestion. They also put a great deal of strain on the
pancreas, liver and digestive system. The body stores LCTs primarily
as fat, and they are also deposited into arteries in lipid forms such as
cholesterol.
In stark contrast, MCTs have numerous health promoting qualities.
They are much smaller than LCTs, which means they can permeate cell
membranes easily and do not require special enzymes to be functional
to the body. They are easy to digest and are also sent directly to the liver
where they are converted to energy—not stored as fat. MCTs also help to
stimulate metabolism.
