Calli’s Christmas
Trifle
F
or years now, my family have loved my trifle for Christmas and I will
make another one this year again. It’s not strictly traditional, pretty
simple and easy to do and light to eat after a heavy meal!
Ingredients
Method
1 tin mixed fruit
1. Have all your ingredients and your large glass bowl ready
before you start.
1 tin chopped pineapple
1 tin mandarin oranges
2. Make the jelly as per instructions on packet and leave to cool.
1 tin of cherries
3. If you’re making custard and not buying, then make it first
and leave to cool.
A handful of walnuts or pecans
4. Open all the tins and drain the juice into a jug.
500 ml Ready-made Custard (or you can
make your own)
5. Lightly soak a few biscuits in the wine (or fruit juice from
tinned fruit).
Digestive Biscuits
Red wine (or can use any fruit juice if you
don’t like alcohol)
Any flavoured jelly, I tend to use strawberry
jelly
500 ml whipping cream
Glazed Cherries for decorating
6. Place at base of bowl, then scatter some fruit and nuts.
7. Pour over the jelly, enough to cover, then pour over the
custard (also enough to cover).
8. Soak more biscuits and repeat till you are near top of bowl,
leaving enough space where the cream will go and also with
your last layer being custard.
9. Refrigerate overnight or about 6 hours. I test to see if set by
giving the bowl a gentle shake. It should wobble.
10. I then whip up the cream to soft peaks, spread over the top
and decorate with glazed cherries.
11. Serve chilled.
