PASSIONFRUIT CURD
Whisk the eggs and sugar together and set
aside. Bring both juice to the boil, once there
whisk in the egg mix and continue whisking
until it reaches 84C
Remove from the heat and whisk in the soften
gelatine
Strain the curd into a gastro tray and allow to
cool to 40C. Blend in the butter and allow to set
Place all ingredients into Thermomix, holding
back on the butter and gelatine
Cook at 90C for 15 minutes on speed
3. Ounce visibly thickened, add the
gelatine and let cool slightly before
blitzing in the butter on speed 10 for
5 seconds. Pour into gastro tray to
cool quickly.
Preheat the oven to 125 C and place the milk chocolate, milk powder, vanilla
bean and seeds into a tray lined with a silpat mat and toss to combine. Place
into the oven and bake for 1 hour and 15 minutes. Remove from the oven
every 20 minutes to stir.
In a small saucepan place the sugar
and water together and bring to 121 C.
