CHOCOLATE CHOCOLATE SUCKERS Suckers for Valentine’s Day Moulding Chocolate Suckers 1 When moulding chocolate suckers the same rule applies irrespective of mould shape or colour of chocolate To make chocolate suckers simply melt your moulding chocolate in a double boiler or microwave. Spoon your melted chocolate into your mould. Place a stick into the melted chocolate. Ensure that the stick is completely covered and is at least 1/3 way up into the chocolate. Set in the freezer for approximately five minutes. Once unmoulded decorate as desired. 2 Foiling Chocolate Suckers 1 2 3 Chocolate Suckers with Fillings To make a chocolate sucker with a filling, first ensure that your mould is sufficiently deep. Brush your mould with melted chocolate. Make sure the chocolate has coated the entire mould and that it is a good thick coating of chocolate. Allow to set in the freezer for one minute. Remove from the freezer and fill with your filling of choice. Only fill 3/4 way up the mould. Cover with melted chocolate and insert your sucker stick. Place in the freezer to set. 4 To wrap you chocolates in foil place a piece of foil on top of the mould with the colour of the foil facing down. Press your chocolate ready moulded chocolate back into the mould. Fold the excess foil over the back of the chocolate. Remove the chocolate from the mould and gently rub if with a soft cloth so Coloured Suckers If you would like more that one colour chocolate in your mould, pipe or brush coloured chocolate of your choice. Allow to set in the freezer for one minute. Pour your second colour chocolate onto of the first colour and place your sucker stick into your mould. Place back in the freezer to set for a further five minutes.
