Chocolate Cupcakes
CUPCAKES
125g butter
250ml castor sugar
3 eggs
5ml vanilla extract
375ml cake flour
7ml baking powder
3ml bicarbonate of soda
125ml cocoa powder
250ml buttermilk
(Makes 12)
ICING
125g butter
75g hazelnut paste
60ml cocoa powder
500ml icing sugar
40ml milk
Cupcakes
Cream butter and sugar until light and fluffy.
Add eggs one at a time, beating after each addition.
Mix in vanilla.
Stir in dry ingredients alternately with the buttermilk.
Spoon into cupcake cases and bake at 200C for 20 minutes.
Icing
Cream butter.
Slowly add icing sugar and then milk to soften mixture.
Divide into two bowls.
Adding hazelnut paste to one of the bowls and cocoa powder to the second bowl.
Fill a piping bag, one side of the bag with the one mixture and the other side with the
mixture from the second bowl.
Use any star nozzle to pipe swirls ontop of the cupcakes.
