Pancetta & Tomato Skillet Eggs Serves 2 to 4
ingredients method
5 thin slices pancetta 1 / 2 cup grape tomatoes
2 tsp chopped fresh thyme leaves 5 eggs
1 tbsp olive oil sea salt and freshly ground pepper
Cook pancetta in a large non-stick skillet over medium heat until crispy, about 5 minutes. Transfer pancetta to a paper towel-lined plate to drain, leave fat in skillet.
Add tomatoes and thyme to skillet and cook over medium heat for 2 to 3 minutes. Drizzle oil over tomatoes and return pancetta to skillet. Crack eggs over tomato mixture and cook eggs sunny side up for about 4 minutes. Season with salt and pepper. Serve eggs directly from skillet.
