What do you love most about Italian cuisine ?
I love the simplicity and purity of Italian cuisine . You just need a few herbs , olive oil , some wine , and of course , only fresh ingredients !
Favorite dish on the menu ?
It ’ s called Gamberoni e Fagioli . It has white beans , green onions , and shrimp . I labeled it “ My Favorite ” on the menu , and when my clients tasted it , they kept asking for it repeatedly . Another favorite is Spaghetti Bottarga ! It ’ s a dish you either absolutely love or don ’ t — there ’ s no in between . I wrote on the menu that it is “ only for my adventurous patrons !” It ’ s a very particular dish , but so damn good !
What is your favorite place in Los Angeles ( other than Cesare ) for coffee or tea ? For a sweet treat ? And for a glass of wine ?
For coffee , I wouldn ’ t go anywhere else but Euro Caffe on Canon Drive . Tell the owner , Vartan , that Cesare sent you ! My wife , Pamela , and I used to take our two sons there , and Vartan and his wife would give them milk in coffee cups and treat them to some of their delicious biscotti . We have great memories from that place . As for wine , I ’ m very lucky — my dear friends Lawrence and Gina have a wine cellar that is heaven on earth . If you know , you know !
