Ah , spring ! Of course , snow showers are predicted for this evening , but we know that warmer , sunny days that make this area seem so delightful can ’ t be far away . This easy lemon dessert was shared years ago by one of my co-workers , Deb Horton . Both of us love to cook , and we shared many recipes over the years . This dessert does not involve baking and can be made ahead of time .
Easy Lemon Freeze Enough 1 cup graham cracker crumbs 1 21-oz . can lemon pie filling 1 12-oz . can condensed milk
( such as Eagle Brand ) ½ cup lemon juice 1 ½ cups whipped topping
Mix melted butter with graham cracker crumbs and press into the bottom of 8x8

Franklin County Youth Philanthropy Program Learn . Lead . Lift .
In celebration of Franklin County Community Foundation ’ s twentieth anniversary , a Youth Philanthropy program has been established . Local schools , including Brookville Elementary , Mt . Carmel , Laurel , St . Michael , Franklin County Middle School and Franklin County High School have been awarded $ 250 grants from the Foundation to be used to complete a project to benefit the community in some way . As part of this initiative , students get to :
LEARN – Comprehend what Youth Philanthropy is .
LEAD – Acquire leadership skills such as decision-making , teamwork , time management , relationship building , communication , and personal giving .
LIFT – Develop and complete a project that improves or “ lifts up ” the community .
The Franklin County Community Foundation communicated guidelines for the program to the members of the Student Council of each school . The groups were encouraged to get other students within their school to help with the project . Students may do some type of fund raiser to obtain additional funding for the project if they choose .
When the projects are completed , they will be presented to the Board of Directors of the FCCF and at a meeting of the School Board for the Franklin County Community School Corporation .

This is one of Lee ’ s long-held recipes and can be divided or enlarged to fit the number of folks being served . The amounts in this original recipe yield six main course servings . Leftovers are easily reheated . Now that I ’ m serving one person , I divide the recipe by 4 and have enough for lunch the following day .
This dish is versatile , and chicken or shrimp can be substituted for ham , or you can omit meat entirely . If you don ’ t have fans of asparagus , substitute green peas .
Summertime Vegetable Pasta
½ pound fettuccine 1 / 3 cup onions , minced 1 clove garlic , minced ½ pound asparagus cut into
2-in . pieces ¼ pound sliced fresh mushrooms 1 medium zucchini , quartered and sliced thinly 1 carrot , halved lengthwise and sliced thinly 2 tablespoons vegetable oil ½ cup sour cream ½ cup chicken or vegetable broth 1 teaspoon crushed basil ½ cup Parmesan cheese ½ pound diced ham 2 tablespoons minced green onions
Cook pasta according to directions . In a wok or large skillet , heat oil over mediumhigh heat . Sauté ´ onion and garlic for about 3 minutes . Add remaining vegetables and stir-fry for about 3 minutes . Add chicken broth , and basil and stir . Continue to cook over medium heat to reduce liquid . Add chicken broth and green onions and continue cooking until warmed . Add sour cream and cheese . Toss to combine . Top with additional parmesan cheese if desired .
