A Night of Education and Fun for All
The East Central Family,
Career and Community
Leaders of America (FCCLA)
Chapter hosted the sixth
annual Girls’ Night event-
a night where any middle
school girl from Sunman
Dearborn Middle School
can come to the high school
for an evening of fun and
empowerment. Throughout
the night, the young girls
attended workshops on
recognizing and reacting to
cyberbullying, how to say no
to peer pressure, enhancing
their self-concept and how to
have healthy relationships.
The event was completely
free to any girl who wanted
to come and participate.
Snacks, dinner, and free
t-shirts were provided, plus
an unforgettable night of
mentoring and building
friendships. Girls, grades 6-8,
participated in Girls’ Night.
Volunteers Samantha Santen
and Bridgitte Taylor educated
the girls about what healthy
relationships are.
FCCLA (Family, Career,
and Community Leaders of
America) is an organization
that allows teenagers to
become great leaders and
active members in their
communities. This event
was led by FCCLA members
Molly Graham and Eva
Grimm. They wanted to
make a difference in the
lives of young girls to help
stop the cycle of bullying
among youth. The event was
primarily youth-led with
high school-age girls who
volunteered to be mentors to
the middle school girls. The
high school mentors were

medium heat until the sugar
has dissolved. Stir in vanilla
and then mix in the oats.
Cook the mixture for 3-4
minutes over low heat until
the mixture is well blended.
Pour ½ of the oat mixture
into the prepared dish and
spread evenly. Reserve the
remainder of the mixture.
To make the filling, melt the
peanut butter and chocolate
chips together in a small
microwave-safe bowl; stir
until smooth. Pour this
mixture over the oat layer but
reserve about ¼ cup for the
topping.
Spread remaining oat
mixture in the pan and drizzle
remaining chocolate mixture
over top.
Refrigerate 2-3 hours or
overnight. Bring to room
temperature before cutting
into squares.
Long ago, I prepared
candy treats for Christmas
gifts for neighbors, teachers,
and friends. One of the
favorite items was English
toffee, a brittle-thin layer
of sugar butter and cream
topped with chocolate. The
recipe below is a far easier
and quick to prepare version
but is quite similar in taste.
Betty Ann Lux, a friend from
Providence Church, has an
almost identical recipe called
Tennessee Toffee that appeared
in a church cookbook years
ago. By whatever name, the
treats are great.
Almost Toffee
1 cup butter
1 cup brown sugar
35 saltine cracker squares
1 12-oz. package milk
chocolate chips
Finely chopped pecans or
walnuts (about 1/3 cup)
Preheat oven to 400°. Line
a cookie sheet with foil and
layer the crackers side by
side. Bring the butter and
brown sugar to a boil in
a medium saucepan over
medium-high heat. Continue
to cook at a rolling boil for
3 minutes while stirring
constantly. (Hint: Follow this
instruction to stir constantly,
or you might have a burned
syrup!) Pour and spread
evenly over the saltines.
Bake for 5 minutes.
Remove from oven and let
cool for a few minutes. Pour
chocolate chips over the top
and spread evenly with a
knife as they melt. Sprinkle
with chopped nuts. Place into
refrigerator to chill until set.
Break into bite-sized pieces.
Needs to be stored in air-tight
container in a cool place.
Best wishes for a joyous
holiday season with pleasant
memories. May you find time
to enjoy in those activities and
events taking place during
these early winter days.
