This issue's theme of The Atlanta Lawyer is when community service
hits home. We asked the Boards their favorite home comfort recipes.
BETSY GRISWOLD
UPS
1 lb ground beef or turkey
1 cooked rotisserie chicken (diced
very fine)
1 onion
1 leek
2 garlic cloves
4 potatoes (par boil)
16 oz frozen corn
16 oz lima beans
1 28 oz can of tomatoes
32 oz chicken or vegetable stock
1 box/can of baked beans
1 jar of BBQ sauce
½ and ½ cream or milk
Season to taste: salt/pepper, red
pepper flakes, garam masala,
curry, cinnamon, and cumin.
I call it Betsy's Brunswick Stew
and Cornbread! Sauté the onion,
leek and garlic until soft. Season
with salt, pepper and red pepper
flakes. Sauté the ground beef or
ground turkey until well browned.
Season with cumin, cinnamon,
curry, garam masala. Add canned
tomatoes, stock, baked beans,
potatoes, corn and lima beans
and stir. Add a jar of BBQ sauce
and cream to taste. Bring to a boil
and cook 10-15 minutes. Add
finely diced chicken and return
to boil for 10-15 minutes. Using
an immersion blender blend stew
leaving some of the vegetables
slightly chunky. Serve with corn
bread. Enjoy!
