My favorite holiday recipe is Ina Garten ’ s stuffed mushrooms . They are my go-to for holiday parties and Friendsgiving — I have given out the recipe at almost every event !

Shakshuka : Sliced Red Onions or Bell Peppers , Leeks or Shallots Olive Oil 2 Garlic Cloves 1 Tsp . Ground Cumin 1 Tsp . Paprika Pinch of Salt & Cayenne 28 Oz . Can of Tomatoes 1 Cup Grated Cheese 4 to 6 Eggs
Set oven temperature to 375 . Saute onions and / or peppers in several tablespoons of olive oil in large oven proof skillet until soft . Add garlic and continuing stirring until fragrant . Stir in spices and continue stirring for a few minutes , then add can of tomatoes . ( If whole , you will need to help break them up ). Cook at medium heat for 15 to 20 minutes , while continuing to stir . Cover with grated cheese and carefully crack each egg into the pan seasoning them with salt and pepper . Bake for seven to 10 minutes depending on doneness of the eggs . Serve hot with chopped fresh herbs .

Haystacks ( Chocolate No Bake Cookies ): 2 Cups of Sugar ½ Tsp . Salt 1 / 4 Cup Cocoa Powder ½ Stick Butter ½ Cup Milk 2 Cups Minute Oats ½ Cup Peanut Butter 1 Tsp . Vanilla ½ Cup Pecans ( optional )
Mix sugar , salt , and coca in a saucepan . Add butter and milk . Bring to a boil for 1 minute and 30 seconds . Add remaining ingredients and mix . Drop by the spoonful on wax paper and chill . Makes 24 cookies .

Squash Casserole : 2 Lbs . Summer Squash 1 Bell Pepper 2 Onions , Medium 1 Can of Evaporated Milk 1 / 3 Lb . Sharp Cheddar Cheese ( 4 Oz .) 1 / 2 Stick of Butter 30 Saltines Dash of Pepper
Chop pepper , squash and onion together and boil . Drain and chop . Beat eggs and add crumbled saltines , evaporated milk and pepper . Bake , add cheese on top and back for 30 more minutes .

Sweet Potato Soufflé : 2 Lbs . Small Sweet Potatoes 1 / 4 Cup Butter 1 / 4 Cup Sugar 1 / 3 Cup Light Cream 2 Eggs , Beaten Cinnamon to Taste 2 Cups Mini Marshmellows
Cook sweet potatoes in water until tender . Peel and mash in large bowl . Add butter , sugar , cream , eggs , and cinnamon . Spoon mixture into greased 2-quart dish . Back at 350 degrees for 30-40 minutes . Top with marshmellows and increase to 475 for 5 minutes .
