Chef’s Table 2016
RPAYC Chefs Steve Proctor and Jon Pryor presented their dishes for the finals of the Clubs NSW Chef’s Table competition. To
make the competition more challenging, the teams had to stick with the budget of $23 ahead and had to use fish, rabbit and
Australian native elements in their three course meal. Steve and Jon prepared a smoked confit ocean trout served with Karkalla
(a native flowering plant to South Australia) horseradish, red lace, pearls and trout crackling for entree. Their main was a white
rabbit served with beetroot, red radish, plum, eschallot and drizzled with pickled cumquat jus. Dessert was a rich serving of Ecuadorian dark chocolate Delice, muscatel ice cream, almond Florentine and chocolate aero. These dishes were served up to a panel
of three judges from Clubs NSW, two are industry professionals with over three decades of experience and the other judge is
Courtney Roulston who is a past Masterchef finalist. Courtney commented on her Social Media page “A hidden gem with million
dollar views. Thank you for a sincerely wonderful meal & warm service chefs Steve Proctor
& Jon Pryor”
Steve and Jon join 20 other finalists across NSW, judging concludes on the 10th June and a
winner will be announced on the 25 July.
