Smoked Salmon and Lemon
Scotch Egg
Ingredients
500g long sliced smoked salmon
500g fresh salmon fillet
3 lemon zests
20g chives
250g panko breadcrumbs
250g flour, seasoned
6 eggs, beaten
6 soft boiled eggs
Salt and pepper to taste
Tartare Sauce
Ingredients
150g pickled gherkin, brunoise
150g pickled capers, brunoise
200g shallots, brunoise
550g mayonnaise
5 hard boiled eggs, finely grated
Salt and pepper to taste
Lemon juice to taste
Tarragon, chopped, to taste
Chives, chopped, to taste
Parsley, chopped, to taste
Method
1. Combine all and season and adjust
with lemon juice.
