With a creative approach to cooking and love of locally sourced,
seasonal produce, Michael Lecouteur has showcased his magic at
several four- and five-star hotels throughout the UK before making
his way to London.
The alluring challenge was to fulfil the position of head chef at the
bastion of excellent British cuisine, Smiths of Smithfield where he
served up inventive British dishes for two years.
Having proven his mettle in the market, Michael was charged with
helping to open Bird of Smithfield, a much-anticipated opening
by former Ivy chef Alan Bird. After ensuring its launch year was a
success, Michael finally moved to Mews of Mayfair and Mayfair
Pizza Co., bringing with him a love of modern British cuisine and a
penchant for serving up tradition with a twist.
