Hajime
The trattoria-cum-wine bar is handsome
and highly inviting. A warmly lit dining
room features an understated grey and blue
colour palette, with a blend of stainless steel,
recycled wood and reused materials. The
stylish interior is made up almost exclusively
of recycled materials, such as church pew
banquettes, Thonet chairs and milk glass
pendant lights.
The artist-designed, laser-cut aluminium
panels create charming plays of light and
shade throughout the room. Enjoy the
generous touches of whimsy, personality
and warmth, including antique glassware
and a collection of stainless steel pitchers.
The menu is presented on a wall-mounted
370
chalkboard. The zinc bar is truly as fabulous
as the attentive staff.

HAJIME
Osaka, Japan
It took just 17 months after it opened in May
2008 for Hajime to garner a 3-star Michelin
ranking, the shortest timeline in Michelin
restaurant history. No wonder. The menu
is defined as “philosophical gastronomy”,
which takes diners on an extraordinary
sensory journey along which they can
savour a sublime symphony of textures,
flavours and temperatures.
