rant’s organic garden allowed the freshness of ingredients to compliment the risotto. It was agreed this was the best scallop dish we’d eaten to date. Texas farm raised fresh redfish was our second entree. The redfish is pan seared with a light seasoned braise and finished in the oven. Moist and flaky the fish is placed atop a 3-bean Mediterranean delicacy of green lentils, white kidney beans and red Quinoa. Served with orange caper butter and infused with the flavors of fresh herbs, it gives this redfish dish an earthy herbal flavor. Fresh, clean, soothing and pure satisfaction is the feeling we all experienced while enjoying this entree. It was hard to name a winner between the Diver Scallops and the Redfish dishes. Different, distinct and refreshingly satisfying, we declared it a tie. Dining out should always include a des-
