Tougher cuts need a strong marinade that includes an acidic ingredient (lemon juice, vinegar or wine) and can be marinated 6-24 hours. Always marinate in the fridge…not room temperature. And, use at least a quarter cup of marinade per pound of meat. How do I know when the meat is thoroughly cooked? Use a food thermometer and keep these safe minimum internal temperatures in mind: 165°F for poultry, 160°F for ground meats, 145°F for medium rare beef or pork steaks/chops (160°F for medium and 170°F for well done.) Sometimes the meat I grill turns out dry… any tips? Grilled meats need to rest before serving. Put your grilled meat on a platter tented with foil and let it rest for 5-10 minutes so the juices can redistribute. Also, don’t cut the meat to check the doneness while it’s cooking… you’ll lose some of the juice. This is a question of preference. Some people prefer the smokier taste you get from cooking with charcoal. Gas grills have the convenience factor because they start right away, while charcoal may require some patience.
