Ingredients 1 3 / 4 cups all purpose flour 1 cup granulated sugar
1 3 / 4 teaspoons baking powder
1 / 2 teaspoon salt 2 / 3 cup whole milk 1 / 2 cup vegetable oil 2 large eggs 1 large egg white
1 / 2 vanilla bean, split and scraped
Directions 1. Heat oven to 350 degrees.
2. Line a cupcake pan with paper liners, or spray with baking spray. Set aside.
3. In a medium bowl, whisk together flour, sugar, baking powder, and salt. Set aside.
4. In a small bowl, whisk together milk, oil, eggs, egg white, and vanilla bean.
5. Pour wet ingredients over dry ingredients.
6. Mix until smooth.
7. Use a 3 Tablespoon scoop to portion batter into prepared pan.
8. Bake for 20 minutes, or until done.
