Preheat oven (180°C) and prepare the pan (grease it if necessary). 2. In a mixing bowl combine the dry ingredients. 3. Add the carrots, walnuts and raisins. 4. Stir to combine. 5. In another mixing bowl combine the oil and maple syrup and beat them together with a whisk. 6. Combine the wet ingredients with the dry ones and mix with a big spoon just untile combined. 7. Fill the muffin pan and bake for 13-15 minu- tes. Cook the honey with the ginger spice. 2. Pour the honey with the spice (hot) onto the flour, chop with the knife. 3. When cooled, add sugar, margarine and egg. 4.
