Fit Carrot Muffins
INGREDIENTS
1 ¾ cups white whole wheat flour
1 ½ teaspoons baking powder
1 teaspoon ground cinnamon
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon ground ginger
¼ teaspoon ground nutmeg
2 cups peeled and grated carrots
½ cup chopped walnuts
½ cup raisins
1 / 3 cup melted coconut oil or extra virgin olive oil
½ cup maple syrup or honey
2 eggs, preferably at room temperaturę
1 cup plain Greek yoghurt
METHOD
1.
Preheat oven (180°C) and prepare the pan
(grease it if necessary).
2.
In a mixing bowl combine the dry ingredients.
3.
Add the carrots, walnuts and raisins.
4.
Stir to combine.
5.
In another mixing bowl combine the oil and
maple syrup and beat them together with a
whisk.
6.
Combine the wet ingredients with the dry
ones and mix with a big spoon just untile
combined.
7.
Fill the muffin pan and bake for 13-15 minu-
tes.

GINGERBREAD CHRISTMAS
TREE
INGREDIENTS:
½ glass honey
1 teaspoon ginger spice
1 ½ glass white flour
½ teaspoon baking soda
10 table spoons sugar
2 table spoons margarine
1 egg
METHOD
1. Cook the honey with the ginger spice.
2. Pour the honey with the spice (hot)
onto the flour, chop with the knife.
3. When cooled, add sugar, margarine
and egg.
4. Make the dough, roll it out and cut the
stars with a star mold.
5. Glue the stars with icing to shape the
tree.
